Orange Cookies

2/3 c shortening
3/4 c sugar
1 egg
1/2 c orange juice
2 T orange rind (more needed for frosting, see below)
2 c flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

Heat oven to 400 degrees.  Mix shortening, sugar, and egg.  Stir in orange juice and rind.  
Blend dry ingredients.  Stir in.  Drop rounded teaspoonfuls 2" apart on ungreased baking sheet.  
Bake 8-10 minutes.  Frost with orange butter icing.

Orange Butter Icing

Blend 2 cups sifted powdered sugar and 2 tablespoons butter.  Stir in 1 tablespoon grated 
orange rind and about 2 tablespoons orange juice until smooth.  

Makes about 4 dozen 2" cookies.
